v1.30.26: Wire qc.proteome_coverage into qc.run_all (#39) (#215)

The proteome_coverage diagnostic shipped in v1.30.23 wasn't picked up
by the qc.run_all aggregator (and therefore not by the bare
``hitlist qc`` summary command). One-line fix.

Documents in the run_all docstring why curation_plan stays out --
it's a rollup of the other checks and including it would
double-count signals in the summary; proteome_coverage is its own
independent diagnostic axis so it belongs.

Drive-by: test fixture for test_run_all_returns_named_dataframes
gains a ``source_organism`` column, since proteome_coverage now
projects it.
