feat(bb_registry): migrate bb_openapi to auto-registration; replace bb_openapi_register(server,meta) with bb_openapi_set_meta()+registry init (#126)

Splits bb_openapi into a module-level setter (bb_openapi_set_meta) and registry init function (bb_openapi_init). This matches the pattern used by other registry-enabled components and drops the public bb_openapi_register symbol (TM is pinned to this breadboard binary, no back-compat needed).

- openapi_handler now gracefully handles NULL s_meta with fallback defaults: title 'breadboard device' and version from bb_system_get_version()
- Added CONFIG_BB_OPENAPI_AUTOREGISTER (default-on) Kconfig flag; gate both the registration macro and CMake force_register helper
- Examples and sdkconfig.defaults updated to include bb_openapi in REQUIRES and enable the autoregister flag
- README and CLAUDE.md updated to reflect the new pattern
