Add nightly CI workflow

Runs `moon check`, `moon fmt`, and `moon test` against the nightly
toolchain on Linux/macOS/Windows daily at 06:00 UTC, plus on demand
via workflow_dispatch. Catches regressions and surfaces upcoming
deprecations before they hit the stable channel that PR/push CI uses.

The install scripts accept a version argument: unix.sh takes it as a
positional arg (`bash -s nightly`); powershell.ps1 reads it from the
MOONBIT_INSTALL_VERSION env var.
