fix(release): pin espressif32 platform to pioarduino fork (TA-184) (#202)

CI release builds were failing on `cp .pio/build/<env>/firmware.factory.bin`
— the file didn't exist. Local builds produced it because the user's
PlatformIO had pioarduino's fork installed (55.03.38), which adds a
post-build action that auto-merges bootloader + partitions + ota_data +
app into firmware.factory.bin. CI fresh-installs the official Espressif
platform, which has no such hook.

Pin the platform URL so local and CI both resolve to the same build.
