v1.7.5: Rename reference_proteomes label → proteome_label (#53)

Schema consistency parallel to sample_label/study_label (renamed in
v1.7.0).  52 YAML occurrences migrated to the new key; the builder
prefers proteome_label but still accepts the legacy label: with a
DeprecationWarning.

Affected: hitlist/data/pmid_overrides.yaml (52 renames),
hitlist/builder.py::_collect_pmid_extra_proteomes (reader).
