feat: expand mining stats with session, lifetime, and EMA tracking (#60)

- add session stats (shares, rejected, hashes, uptime, last share timestamp)
- add lifetime stats persisted to NVS (total shares, best difficulty, total hashes)
- add EMA smoothed hashrate alongside instantaneous rate
- add ESP32-S3 internal die temperature sensor reading
- add hash_to_difficulty() for best-diff tracking at share verification
- fix asic_shares never being incremented on ASIC builds
- expand /api/stats JSON with all new fields
- add periodic 10-minute NVS checkpoint timer for lifetime hashes
- add unit tests for EMA and hash_to_difficulty functions
