`tests(pec): make test model input ordering deterministic for LLVM input marshalling`

`test_parameterestimationcomposition` was building the fixture model with a set of input nodes, which yields nondeterministic input port ordering. Replace it with explicit ordered pathways to stabilize `pec_good` input packing and avoid intermittent LLVM `IndexError: invalid index` in `test_pec_run_input_formats`.
