refactor(store): extract helpers from loadSSTables to reduce complexity

Extract loading logic into focused helper functions:
- sstFile: holds SSTable file info
- collectSSTableFiles: scans directory for .sst files
- parseSSTableID: extracts ID from filename
- loadSSTablesParallel: handles concurrent loading
- organizeTables: adds tables to levels and sorts

Reduces cognitive complexity from 23 to below threshold.
