fix(organization)!: when admins resent an invitation, its status is reset to pending TASK-1513 (#5495)

### 📣 Summary
Changed invitation behavior so that resending an invitation resets its
status to pending


### 📖 Description
Previously, when an admin resent an invitation, its status changes to
`resent`, which could lead to confusion in tracking pending and accepted
invites. This refactor updates the behavior so that when an invitation
is resent, its status is automatically reset to pending, ensuring a
clear and predictable invitation lifecycle.
