test(projectHistoryLogs): ensure project history logs generated from v1 endpoints TASK-944 (#5245)

### 💭 Notes
Add unit tests to make sure we generate PH logs when users hit v1
versions of endpoints. This does not apply to all changes, since some of
them cannot be done in V1.
