Use vm_read_overwrite instead of vm_read

Change to use vm_read_overwrite instead of vm_read (as suggested here:
https://github.com/luser/read-process-memory/pull/5#issuecomment-408825281 )

Not only is this code simpler, I ran some tests and it seems like this is
significantly faster (with this change my overall rate of sampling from
a target process more than doubled, and this isn't the only call happening
in that test).
