test(storybook): make tests more robust DEV-2484 (#7309)

### 📣 Summary

Made the `AssetTagsModal` and `FormLanguagesManager` Storybook
interaction tests more reliable so they stop failing at random in CI.

### 💭 Notes

These two Storybook play-function tests were flaky: passing one run,
failing the next, with no code changes in between. Turned out to be two
unrelated race conditions.

Both fixes target the actual timing source rather than just piling on
longer timeouts.

### 👀 Preview steps

1. ℹ️ have the frontend checked out and Storybook set up
2. run the Storybook interaction tests for these two stories several
times in a row:
   - `Features/AssetTagsModal → UpdateTagsFlow`
   - `Features/FormLanguagesManager → BasicFlow`
3. 🔴 [on main] notice that one of them fails every so often (`Unable to
find role="textbox"` or `expected null to be 'Nom'`)
4. 🟢 [on PR] notice that both pass consistently across repeated runs
