ci(docs): fix commit pathspec so regenerated screenshots are committed

The step captured, copied and pixel-filtered all 12 shots, but the final
git diff/commit used the pathspec 'docs/*/assets' which does not match the
staged files, so it reported 'No screenshot changes'. Use explicit paths
(docs/members/assets docs/moderators/assets) for the diff and commit.
