fix: serve real Prometheus metrics + JVM metrics at /metrics/prometheus #920

The /metrics/prometheus admin endpoint was wired to Dropwizard's JSON
MetricsServlet, so it served Dropwizard's JSON format with dot-separated
metric names instead of the Prometheus exposition format the path implies.
DropwizardExports already bridged the metrics into the Prometheus registry,
but nothing exposed that registry.

Use the Jakarta Prometheus MetricsServlet so the endpoint serves the
Prometheus text format, and add DefaultExports for JVM/process metrics
(heap, GC, threads, CPU). A Prometheus server can now scrape this endpoint
and Grafana can dashboard/alert on it.
