refactor: use @well-known-components/http-requests-logger-component again

Revert the custom request-logging middleware and use the maintained
@well-known-components/http-requests-logger-component instead of duplicating it. The
component is typed against the node-fetch interfaces server, so its single call is
bridged with an `as unknown as IHttpServerComponent` cast; it does not pull
@well-known-components/http-server back into the tree.
