Fix several Graphiti-blocking Cypher execution edge cases and add regression coverage.

- Prevent MATCH-started mutation queries from being misrouted into CALL/read-style execution.
- Fix MATCH+UNWIND+CREATE/MERGE row handling for list-valued payloads and n-arity inputs.
- Preserve writes when inline vector procedures are present in bulk shapes by using the mutation path consistently.
- Expand UNWIND+MATCH+CREATE fast path to support optional passthrough WITH and RETURN count(...) tails.
- Stop relationship SET parsing at WITH boundaries to avoid swallowing trailing clauses.
- Make variable replacement deterministic by replacing longer variable names first (avoids prefix-collision corruption).
- Add Bolt HELLO patch metadata regression coverage (`patch_bolt` includes `utc`).

Includes new regression/matrix tests for:
- MATCH+UNWIND+CREATE list-property cardinality behavior
- relationship vector-procedure bulk shapes across n-arity variations
- fast-path parser and count-return variants
- Bolt UTC patch negotiation metadata
