restore: re-apply fixes lost when b6b1a5905 force-reset the workspace

b6b1a5905 ("fix(ci): force-reset local production branch before
auto-merge") ran git checkout -B production origin/production over the
master workspace and quietly dropped a bunch of master-only changes
along with the intended .circleci edits. 2dea05da4 already restored the
rspamd milter wiring; this restores the rest:

- scripts/backup/loki-backup.sh: bring back the BusyBox/Alpine-safe
  cutoff date computation. The reverted GNU-only `date -d "X days ago"`
  silently fails on the Alpine loki backup runner so old GCS backups
  never get cleaned up.

- iznik-batch/app/Services/SpamCheck/SpamCheckService.php → RspamdService.php:
  re-apply the rename that disambiguates this dormant outgoing-mail
  service from the unrelated App\Services\Mail\Incoming\SpamCheckService.
  Update SpamCheckListener.php import + docker-compose.yml comment to
  match. Restore RspamdServiceTest.php which was deleted in the revert.

- iznik-nuxt3/tests/unit/components/modtools/ModSpammer.spec.js: bring
  back the null-spammer regression test, and add a boolean-spammer case
  that covers the legacy userStore shape (which was the actual prod
  trigger fixed in 6ced7df34).

- .env.background.example: restore the CLOUDFLARE_ACCOUNT_ID /
  CLOUDFLARE_AI_TOKEN documentation block for Workers AI / Flux Schnell.
