feat(qual): escape xml in questions and transcripts DEV-1915 (#6874)

Escape user-entered xml before using it in an LLM prompt.


### 👀 Preview steps

1. ℹ️ have an account and a project with an audio question and at least
one submission
2. Add a transcript
3. Add a select one QA question with xml in the text, eg: `<tag>What is
their favorite color?</tag>`
4. Add a choice with xml in the text, eg `<tag2>Blue</tag2>`
5. "Answer with AI"
6. Look at the KPI logs
