Increase scroll parameters in sleep entry CRUD Maestro test (#513)

The sleep tracking page uses a NestedScrollView with weekly and monthly
stats cards between the form and the entry list, requiring more scroll
distance than other CRUD tests. Increase speed (40→80), lower visibility
threshold (100→80%), and double timeout (5s→10s) so scrollUntilVisible
can reach the RecyclerView entries reliably.
