fix(ci): update E2E test discovery for reorganized subdirectory structure

The discover job used -maxdepth 1 which found zero tests after the E2E
consolidation moved all tests into subdirectories (core/, features/,
settings/, smoke/, etc.). Now scans recursively and outputs {path, name}
objects for matrix consumption.
