fix(test): improve online test reliability for coordinator, provider, and rewind suites

- Fix race condition in waitForProcessingState: add polling fallback and
  move state re-check after joinRoom completes
- Remove leaveRoom from wait helper cleanup to prevent room state races
  between multi-phase test cycles
- Remove brittle duration assertion in anthropic-provider test
- Increase timeouts across all online tests to account for API latency
- Add Date.now() to workspace paths to prevent path collisions
