Fix doctests for extended Python3.10 support (#2315)

### What kind of change does this PR introduce?

* Fixes a doctest expected output so that Python 3.10 and older `xarray`
versions remain supported.
* Adjusts a value assignment performed during the doctest setup phase
that raises an error in older `xarray` versions.

### Does this PR introduce a breaking change?

No.

### Other information:

This wasn't caught until the doctests were run on conda-forge, as those
tests are performed against the lowest-supported Python version. Given
that these changes are only relevant for development purposes, no hotfix
patch is necessary.
