fix(account): clearing fields operated by Selects DEV-1112 (#6340)

### 📣 Summary

Removing country, sector, gender, and organization type is possible
again.

### 💭 Notes

This broke after we've switched to Mantine's Select, as the `onChange`
is not being triggered when clearing - `onClear` is needed :shrug:. Also
added comment about clearing fields using empty string 👌

### 👀 Preview steps

1. Go to Account Settings → Profile
2. Select a country
3. Save
4. Clear country with "x"
5. Save
6. 🔴 [on main] Notice that country field is not cleared
7. 🟢 [on PR] Notice that country field is cleared!
