test(projectHistoryLogs): backfill some unit tests DEV-109 (#5803)

### 💭 Notes
In some ways these tests are redundant with those in
test_project_history_logs, but since those tests involve the whole
request lifecycle (including middleware, signals, etc.), having some
more contained tests on the model methods should make it easier to
troubleshoot. This PR adds tests anywhere there is logic more complex
than just 'take fields off the request and put them on the ph log' and
also adds a few tests for edge cases that cannot occur with normal
request processing.
