refactor #initialize and add hookAround

* hookAround for before/after hook calls, legacy hooks still work
* move configuration before mounting the logger

this is so configuration files can override the logger settings or
simply overwrite the property entirely. The expected use case here is
adding winston transports to the winston logger instance
