build(test): collect coverage from package sources only

The WeScheme specs import the compiled lib/, whose coverage was mapped back
onto src inconsistently, so the overall number moved by several points
depending on whether lib/ was built, and files that no test imports (search,
the example parser, toolkit/debug) were not counted at all. Coverage now comes
from packages/*/src only: 81.6% of lines and 74.9% of branches.
