refactor(string): move regex shared types under the string engine (#4572)

`internal/regex_engine/shared_types` sat at the top of `internal` because the
bytes and string regex engines both used it. With `BytesRegex` removed and
the string parser's Bytes mode gone (#4570), only the string regex uses
these types, so they now live in `string/internal/regex_engine/shared_types`.

Also reword the `Regex` doc comment on escapes, which contrasted `Regex`
with a bytes regex that no longer exists.
