ci: run the test images on Python 3.12 and thumbor 7.8 (#119)

The seven test Dockerfiles were built from python:3.9-slim, which reached end
of life on 2025-10-31. On 3.9 the thumbor==7.* pin resolves to 7.7.7, because
7.8.0 requires Python 3.10, so the suites never exercised the current thumbor,
and the Dependabot bump to pytest 9, which also needs 3.10, cannot install
there. The jpeg-archive and mozjpeg downloads were also extracted without any
integrity check.

All images now start from python:3.12-slim (Debian trixie, Python 3.12.16),
pinned by digest so a new base image only arrives as an explicit change;
thumbor 7.8.0 and Pillow 12 install and every suite passes. The two downloads
are verified against pinned SHA-256 sums before extraction, apt installs skip
recommended packages and clean the package lists, and the two images that build
or unpack a binary end by running it so a broken build fails at build time
rather than in the first test. The mozjpeg image installs gcc explicitly
instead of relying on libtool to pull a compiler in, drops pkg-config and
zlib1g-dev (libpng-dev already depends on zlib1g-dev), and purges the toolchain
with --auto-remove while keeping the libpng runtime that cjpeg links against.
The jpeg-recompress image purges wget and bzip2 with --auto-remove too, and the
jp2 image installs nothing, since the Pillow wheel bundles its own OpenJPEG.
