Build pytrnsys-gui only once when installing test requirements (#636)

The "Install dependencies" step of the `test` job installed `pytrnsys-gui`
twice: as a regular build from `.` on the command line and as an editable
build from the `-e file:.` line in `requirements/test.txt`. Both builds
write `pytrnsys_gui.egg-info` in the same directory, which presumably
makes the step fail with "Access is denied" on `PKG-INFO`.

The `.` was added in b70399b4 so that uv always rebuilds the package: by
default, uv only rebuilds a local directory when `pyproject.toml`,
`setup.py` or `setup.cfg` change, but the build also reads `data/` and
`requirements/release-3rd-party.in`. Instead, add these files to uv's
cache keys and drop the `.`.
