:construction_worker: Measure Python and Cython line coverage

Extend the existing macOS/Python 3.14 coverage job to measure .pyx and
.pxi lines alongside Python modules.

- Enable an opt-in instrumented build and Cython's coverage.py plugin.
- Collect import-inclusive line coverage with pytest-cov.
- Upload repository-relative paths to Coveralls.

Accept known upstream misreporting in this first iteration:
module-level .pxi events can be attributed to the main .pyx file, and
wholly unexecuted compiled sources may be omitted from reports.
These limitations will be addressed in follow-up work, including
upstream Cython issues, while keeping this PR small.
