search: stop mapping a field per reaction emoji (#342)

Message documents carry reactions as an object keyed by emoji, and the
messages index mapped it dynamically: every distinct emoji added two
fields (text + keyword). A history import with ~500 distinct emoji filled
the index to its index.mapping.total_fields.limit (1000), after which any
document with a new emoji was rejected — bulk imports failed with "bulk had
per-item errors", and live reactions with a new emoji stopped updating the
message's search document.

The messages mapping now declares reactions as an object with
"dynamic": false: reactions stay in _source (search hits render them) but
no longer create fields. EnsureIndices puts that onto an existing messages
index too (an additive mapping update), so deployed indexes stop growing
without a rebuild; fields already mapped stay and are harmless.
