feat(chart): support serving HTTPS and HTTP/3 from the pod

Allow terminating TLS in the hub, e.g. behind an OpenShift passthrough route to keep HTTP/2 end-to-end.

- Add extraVolumes and extraVolumeMounts, e.g. to mount TLS certificates.
- Make the Service and container port name configurable (service.portName). An https name switches the test pod and NOTES to HTTPS.
- Expose HTTP/3 over UDP on the same port when it serves TLS (service.http3).
- Allow separate annotations for the metrics Service (metricsService.annotations, defaults to service.annotations).
- Remove the legacy /healthz probes: the hub no longer serves this route.
- Document serving HTTPS from the pod, TLS to the backend and certificate renewal.
