Align key-path escaping with interpolation (#1436)

Escaped colons and backslashes selected different entries in select/update/dotlists than in interpolation. In particular, a key ending in a backslash could not be followed reliably by a child separator.

Use the existing interpolation escape rules in the shared path parser and dotlist assignment scanner. Reuse the private escaping helper for missing_keys() paths so those paths still select and update the original entries. Document the intentional compatibility change and the old/new spellings.

Validation: 1,134 focused tests and 9,800 full-suite tests passed, 362 skipped. Formatting, lint, types, public type coverage, generated API, website examples and 491 legacy doctests passed.
