docs: group the animated walkthroughs in their own section (#1396)

* docs: group the animated walkthroughs in their own section

The nine animated walkthroughs were spread across the Protocol and
Lightning lists, mixed in with specifications and design documents. Give
them their own section after the introduction, ordered from the basics
to individual features, and state the three-minute format once instead
of on every entry.

* docs: order the walkthroughs as a learning path

Move the convergence walkthrough, a deep dive into node internals, from
second to last, so newcomers meet keys, credentials, sign-in and names
first. Paying a DID still follows names and DIDComm, whose name@domain
addresses and Tor endpoints it uses.
