feat(status): Report the total and the offloaded traffic

- Split the listener and cluster stats into the total traffic and its offloaded part.
- Keep running traffic totals in telemetry, fed by the per-packet counters and the offload reporter.
- Rename OffloadDirStat and OffloadStatInfo to DirStat and StatInfo, and omit an unset timestamp.
- Show the total, and the offloaded part when there is any, as total(rx/tx) and offload(rx/tx) in stunnerctl status.
