Collapse state diff subtrees to one replace when smaller (#800)

## What changed
`StateCheckpoint.diff` now checks each changed model, dict or list below
the state root after walking it. If the subtree produced more than 8 ops
and those ops encode to more bytes than one `replace` of the container,
the ops are dropped and the `replace` is emitted instead. The check runs
at every level, so a collapsed inner container feeds into its parent's
comparison.

## Why
Each changed leaf costs an op with its full JSON pointer path, so a
container of many small values that mostly change between checkpoints,
such as a dict of per-key counters, produced a patch about twice the
size of the value. The 8-op threshold keeps small diffs from paying for
the size comparison.
