* build(deps-dev): add vite peer and align coverage-v8 with vitest 5

vitest 5 needs `vite` installed alongside it and a matching
`@vitest/coverage-v8`; without them typecheck fails (TS2428 on the custom
`Assertion` matcher). Same change as defd57f on the superseded #3546.

* test: match vitest 5's Assertion type parameters in the custom matcher

vitest 5 declares `Assertion<R extends void | Promise<void> = void, T = unknown>`,
so the `anyStringOrNull` augmentation's vitest 4 shape `Assertion<T = any>`
fails typecheck with TS2428.
