build: name the command `totebag` for cargo install as well

`cargo install totebag-cli` installed the command as `totebag-cli`,
while the release binaries, Homebrew and the Docker image all call it
`totebag`, and every example in the docs uses that name. The package
keeps the name totebag-cli, since `totebag` is the library on
crates.io; a [[bin]] entry names its binary `totebag`.

- the [[bin]] entry sets `doc = false`, so that `cargo doc --workspace`
  does not write the binary's docs over the library's, which share the
  name
- clap's command name is `totebag`, so `--version` prints
  "totebag 0.9.0" instead of "totebag-cli 0.9.0"
- publish.yaml's cliname, the binary it packages, and the Containerfile
  follow the new file name
- install.md drops the symlink workaround; the release notes tell Cargo
  users to uninstall the old totebag-cli command first

Help text and the shell completions are unchanged.
