docs(postgrest): state the omit-to-insert contract on the PK-derived upsert (#1473)

A Draft that omits a @Default primary key carries nothing for on_conflict
to match, so upsert inserts. Document this as intended: omit the key to
insert, supply it to merge, which lets one draft back a create-or-edit
form.
