fix(postgrest)!: return PostgrestTransformBuilder from legacy insert and upsert (#1420)

PostgREST ignores filters on a POST, so a filter chained after insert or
upsert compiled and silently did nothing. insert and upsert now return
PostgrestTransformBuilder: transforms and execute still compile, filters
do not. update and delete are unchanged.

The typed insert/upsert keep wrapping a filterable builder through a
bridge initializer until the typed half lands with SDK-1569.

BREAKING CHANGE: insert and upsert on the string-based builder return
PostgrestTransformBuilder instead of PostgrestFilterBuilder. See
V3_MIGRATION.md.
