* refactor!: convert seven open-set enums to RawRepresentable structs

Audit of every public enum in Sources (33 found). Values that consumers switch
over and that can grow without a major release become RawRepresentable structs
with static members: AuthChangeEvent, RealtimeClientStatus,
RealtimeChannelStatus, HeartbeatStatus, PushStatus, LogLevel and
RealtimeMessageV2.EventType. Closed sets (associated values, or
cases the SDK must implement such as AuthFlowType, RealtimeProtocolVersion
and PostgresChangeEvent)
stay enums.

RealtimeMessageV2 gains a public eventType accessor. An unknown push reply
status is no longer reported as .ok, and an unknown channel event name is
logged as unhandled instead of dropped silently.

Adds the DocC article EnumsAndOpenSets.md with the policy and the default:
guidance, updates the AGENTS.md enum rule, and appends a V3_MIGRATION.md
section.

BREAKING CHANGE: exhaustive switches over the seven types above need a
default: case, init(rawValue:) is no longer failable, and direct string
interpolation prints the struct description instead of the case name.

The capability-matrix check flags public API added relative to main. The
struct conversions add init(rawValue:) and rawValue on seven types, plus
RealtimeMessageV2.eventType. Each is listed as a supporting symbol of the
feature that exposes it.
