orders: Order::builder(), fluent setters for dead fields, TrailBy (#901) (#937)

- OrderBuilder<'a, C> -> OrderBuilder<T> with Bound<'a, C> / Detached
  targets; Order::builder() builds without a client. Preset legs stay
  Bound-only.
- Setters for PEG STK / PEG BENCH fields, non_guaranteed,
  combo_leg_prices, manual_order_time, cash_qty (qty may be 0).
- trailing_stop / trailing_stop_limit take TrailBy (Amount | Percent).
- pegged_to_market, pegged_to_midpoint, box_top.
- Leftovers (PegBest, hedge_type, adjustable) in #936.
