Use encoding/json/v2 in the handler's remaining JSON calls

Replace the encoding/json calls left in the handler packages, the
playground and the test executor:

- websocket: the connection_init payload is unmarshaled with
  encoding/json/v2 and jsonv1.DefaultOptionsV1(), which is what
  encoding/json.Unmarshal runs.
- multipart form: the "map" part is decoded with jsonDecode, which
  matches encoding/json's Decoder.
- apollofederatedtracingv1, the Altair and Apollo Sandbox playgrounds:
  encoding/json/v2's Marshal with jsonv1.DefaultOptionsV1().
- debug tracer: encoding/json/v2's Marshal with jsonv1.DefaultOptionsV1()
  and the same indentation; TestStringifyMatchesMarshalIndent requires
  the same output as encoding/json.MarshalIndent.
- testexecutor: Marshal instead of encoding with an Encoder and trimming
  the newline it added.

None of these change their output.
