Encode MarshalAny, MarshalMap and Omittable with encoding/json/v2

MarshalAny and MarshalMap wrote values with encoding/json's Encoder,
and Omittable marshaled and unmarshaled its value with encoding/json.
They now call encoding/json/v2 with jsonv1.DefaultOptionsV1(), which is
what those encoding/json functions run on Go 1.27; MarshalAny and
MarshalMap still end the value with the newline the Encoder wrote.

TestMarshalAnyMatchesEncodingJSON, TestMarshalMapMatchesEncodingJSON and
TestOmittableMatchesEncodingJSON require the same bytes, or the same
error, as encoding/json for HTML characters, U+2028, invalid UTF-8,
json.Number, nil slices and maps, omitempty, time.Duration, byte slices
and arrays, and unsupported types.
