Let users choose the JSON options responses are written with

Add SetResponseJSONOptions(json.Options) to executor.Executor and
handler.Server. By default, and when the options are nil, responses are
written with jsonv1.DefaultOptionsV1() exactly as before; passing
json.DefaultOptionsV2() switches to encoding/json/v2's defaults, and any
other combination of options can be given.

respjson.Marshal now takes the GraphExecutor a transport was handed and
reads the options from it through an optional ResponseJSONOptions
method, so graphql.GraphExecutor itself does not change. The executor
is passed down to every writer: writeJson and its error helpers, the SSE
and multipart/mixed writers (the multipart aggregator keeps it), the
websocket connection's writers, and the handler's recover and "transport
not supported" paths. transport.SendError has no executor and keeps the
default options.

The options apply to the JSON the transports encode. Response data has
already been written by the field marshalers and is only re-encoded, so
stricter options can make encoding fail, for example on invalid UTF-8
that a custom scalar wrote.
