docs: route the Lightning wallet design through the Lightning mediator (#1330)

The design doc still showed Drawbridge calling LNbits itself. Drawbridge
now forwards Lightning routes to the Lightning mediator, the only
service that talks to LNbits. Update the architecture, credential flow
and security model to match, and cover the operations the doc was
missing: payment history, zaps, publishing and the public invoice
endpoint.
