test(filters/auth): cover untested constructors and fallback paths (#4302)

### Description

Increases test coverage in `filters/auth` by targeting constructors and
fallback branches that were previously at 0.0% coverage:

- **OIDC (`filters/auth/oidc.go`)**:
- Test constructors: `NewOAuthOidcUserInfos`, `NewOAuthOidcAnyClaims`,
`NewOAuthOidcAllClaims`.
  - Test error handling path for `internalServerError()`.
- **Tokeninfo (`filters/auth/tokeninfo.go`)**:
- Test constructors: `NewOAuthTokeninfoAllScope`,
`NewOAuthTokeninfoAllKV`, `NewOAuthTokeninfoAnyKV`.
- Test `TokeninfoWithOptions` with `tokeninfoSpec` and
non-`tokeninfoSpec` fallback paths.
- **Tokenintrospection (`filters/auth/tokenintrospection.go`)**:
- Test `TokenintrospectionWithOptions` with `tokenIntrospectionSpec` and
fallback paths.

### Coverage Impact
- `filters/auth` overall statement coverage: **87.7% -> 88.7%**
- Targeted functions covered: **0.0% -> 100.0%**
