fix: stop listing the deleted Steward and Stalwart plugins (#58)

Both were deleted from the suite on 2026-07-18. Remove them from the default
optional-plugin list, the Unity-dependents list used to flag plugins
"Unavailable" while Unity is disabled, and the two admin messages that name
the plugins that stand down.
