Update copyright years to 2026 (#578)

## Summary

- update SQLiteCpp copyright end years to 2026
- cover the root and docs READMEs, MIT license, CMake/build scripts,
public headers, source files, examples, tests, and coding-guideline
template
- include older stale project-owned copyright ranges that had stopped at
2020 or 2023, not just the 2025 entries
- leave historical dates such as the 2025 release entries in
`CHANGELOG.md` unchanged
- leave third-party authors' copyright years unchanged

## Scope

This is a mechanical copyright-only refresh: 40 project files have one
SQLiteCpp/Sébastien Rombauts copyright line updated, plus one CHANGELOG
entry. No functional code changes.
