Make the compose defaults the live support chat profile

The defaults in docker-compose.portainer.yml were a third set of values matching
neither bot: a chat deployed from the file alone got MIN_PROBABILITY 42 against the
live 35, no link or mention limits, aggressive cleanup on and the model in veto mode.
Align them with what the support chat actually runs, so a new chat needs credentials,
volume names and the superuser list and nothing else.

check-stack-config.sh now renders the file with only the volume names set and asserts
that profile, so a default cannot drift away from the live bot unnoticed again.

stack-config-test.env claimed SOFT_BAN=false while both stacks run with soft ban, and
the README called the support chat a hard ban for the same reason. Both corrected, and
the README now lists the seven variables the update channel overrides, with what each
one changes, plus the three structural differences that still keep it on its own
compose file.
